  • ¾ cups buttermilk at room temperature
  • 2 ½ tsp instant yeast
  • 2 tbsp granulated sugar
  • 3 large eggs, at room temperature
  • 3 ½4 cups bread flour
  • 1 ¼ tsp salt
  • 4 cloves garlic, finely chopped
  • 6 tbsp salted butter, at room temperature + more for brushing and serving
  • ¼ cup grated parmesan cheese
  • 2 cups grated cheddar cheese
  • ½ cup fresh chopped basil
  • 2 tbsp fresh chopped thyme
  • 1 tbsp fresh chopped oregano
  • 2 tbsp salted butter, melted
  • ¼ tsp garlic powder

Instructions

  1. In a stand mixer, combine room temperature buttermilk, instant yeast, sugar, eggs, flour (3 ½ cups), and salt. Mix with a dough hook until smooth. Add butter and blend until incorporated.
  2. Cover the bowl with plastic wrap and let the dough rise in a warm spot for about 2 hours until doubled.
  3. Roll out the risen dough into a rectangle (12 x 18 inches). Spread garlic herb butter mixture evenly over the surface and top with shredded cheddar cheese.
  4. Roll the dough tightly from one edge to form a log and pinch the seam to seal.
  5. Cut the log lengthwise while keeping one end intact, twist the halves together to create swirls.
  6. Place on parchment-lined baking sheet and let rise again for 45 minutes.
  7. Brush with melted butter mixed with garlic powder before baking at 350°F for 30-35 minutes until golden brown.
