  • 2 lbs lamb shoulder or leg, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. In a Dutch oven over medium heat, sauté the onion in vegetable oil until softened (about 5 minutes). Add garlic and ginger; cook for another minute.
  2. Increase heat to medium-high and brown the lamb chunks on all sides for about 5-7 minutes.
  3. Stir in curry powder, cumin, paprika, cinnamon, and optional chili powder to coat the meat. Add diced tomatoes and mix well.
  4. Reduce heat to low; cover and simmer for 2-3 hours or transfer to a slow cooker on low for 6-8 hours.
  5. Stir in yogurt before serving for added creaminess.
