  • 2.5 lb beef chuck
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 4 garlic cloves
  • 2 carrots
  • 2 celery stalks
  • 1 red bell pepper
  • 1 tablespoon tomato paste
  • 1 can crushed tomatoes (14 oz)
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides, about 3-4 minutes per side.
  3. Remove beef and sauté chopped onion and minced garlic in the same pot for about 5 minutes until fragrant.
  4. Add seared beef back into the pot along with sliced carrots, celery, and red bell pepper; stir to combine.
  5. In a bowl, whisk together tomato paste, crushed tomatoes, apple vinegar, beef stock, oregano, and thyme then pour over the mixture in the pot.
  6. Cover with a lid or foil and bake for 2-3 hours until beef is tender.
