  • 16 oz cream cheese, softened
  • 3 large eggs
  • 2 cups diced apples (like Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1/4 cup caramel sauce (store-bought or homemade)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, melted butter, and salt until combined. Press mixture into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes until lightly golden.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla extract; mix well. Add eggs one at a time, then stir in cinnamon and nutmeg.
  3. Toss diced apples with lemon juice, brown sugar, and cinnamon in a separate bowl.
  4. Pour cheesecake filling over the baked crust and top with apple mixture. Drizzle with caramel sauce and sprinkle nuts if desired.
  5. Bake for 30–35 minutes until set in the center and edges are lightly browned. Cool at room temperature for 30 minutes before refrigerating for at least 2 hours.
