  • 1 cup warm milk (110°F / 43°C)
  • 2¼ tsp active dry yeast
  • ⅓ cup granulated sugar
  • 1 cup pumpkin purée
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 4 cups all-purpose flour
  • 1 tsp salt
  • ½ tsp cinnamon (optional)

Instructions

  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar; let sit for 5–10 minutes until foamy.
  2. Mix in pumpkin purée, melted butter, egg, remaining sugar, salt, and cinnamon until smooth.
  3. Gradually add flour until a soft dough forms; knead for 8–10 minutes until smooth.
  4. Place dough in a greased bowl, cover with a towel, and let rise for 1–1½ hours until doubled in size.
  5. Punch down dough, divide into 12–15 pieces, shape into balls, and place in a greased baking dish.
  6. Cover again; allow to rise for another 30–45 minutes until puffed.
  7. Preheat oven to 375°F (190°C) and bake for 15–18 minutes until golden brown.
  8. Brush warm rolls with melted butter upon removing from the oven.
