  • 1 cup cooked white rice
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Salt and cracked black pepper

Instructions

  1. Season the salmon with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat and sear the salmon for about 3-4 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, add another tablespoon of olive oil and minced garlic; sauté until fragrant (about 30 seconds). Add zucchini and cook for approximately 3 minutes before stirring in cherry tomatoes and spinach until wilted.
  3. Lower the heat, mix in cooked rice, season with salt and pepper to taste, and stir until heated through.
  4. Serve the sautéed veggie rice as a base on a plate or bowl, topped with the seared salmon.
