  • 1 sheet of puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 cup mushrooms, chopped (such as cremini or button)
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 4 ounces herbed goat cheese, softened
  • 1/4 cup heavy cream
  • 1 large egg
  • Salt and pepper, to taste
  • Fresh herbs, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out puff pastry to 1/4 inch thick and cut into shapes for tartlet molds.
  3. Fit the pastry into molds and prick the bottoms with a fork.
  4. Sauté chopped mushrooms, shallots, and garlic in olive oil until soft; season with salt and pepper.
  5. In a mixing bowl, blend herbed goat cheese with heavy cream and one egg until smooth.
  6. Combine sautéed vegetables with cheese mixture and spoon into tart shells.
  7. Bake for 25-30 minutes until golden brown and filling is set.
  8. Cool slightly before removing from molds and garnish with fresh herbs.
