  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp fresh lime juice (for dressing)
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Preheat grill or grill pan over medium heat; cook chicken for 5-6 minutes per side until internal temperature reaches 165°F (75°C). Let rest before slicing.
  3. In a mixing bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper for the dressing.
  4. In a large bowl, combine diced avocado, halved tomatoes, chopped cilantro, and mixed greens if using. Top with sliced chicken and drizzle with dressing.
  5. Toss gently just before serving.
