  • 1 salmon fillet
  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 garlic clove, smashed
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season salmon with paprika, salt, and pepper. Cook skin-side down for about 4-5 minutes per side until cooked through.
  3. Steam baby carrots for about 5 minutes until tender. In a small pan, melt butter and stir in honey or maple syrup. Toss cooked carrots in the glaze.
  4. Steam broccoli florets for about 3-4 minutes until bright green and tender-crisp.
  5. Plate the salmon alongside roasted potatoes, glazed carrots, and steamed broccoli. Serve hot.
