Ingredients

Scale
  • 2 lbs beef chuck roast, trimmed of excess fat
  • 2 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 2 cups beef broth
  • 1 cup red apple vinegar
  • 1/2 cup all-purpose flour
  • 2 tbsp tomato paste
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pat the beef chuck roast dry and season with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the roast until browned on all sides (3-4 minutes per side). Remove and set aside.
  3. Add sliced onions to the pot; cook over medium heat until caramelized (20–25 minutes). Stir occasionally to scrape up any browned bits.
  4. Stir in minced garlic and tomato paste; cook for an additional minute before sprinkling flour over the mixture. Gradually whisk in beef broth and red apple vinegar.
  5. Return the seared roast to the pot along with thyme, bay leaves, and Worcestershire sauce.
  6. Bring to a simmer, cover, and braise for about 2.5–3 hours until the beef is fork-tender.
  7. Let the beef rest for 10–15 minutes before shredding and returning it to the pot with strained braising liquid.
