  • 1 lb ground beef (80% lean)
  • 1/2 lb ground beef
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 packet French onion soup mix
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce

Instructions

  1. In a skillet over medium heat, heat olive oil and sauté chopped onion until caramelized (about 10-12 minutes). Add minced garlic for the last minute.
  2. Preheat the oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, milk, egg, French onion soup mix, Worcestershire sauce, salt, and pepper. Add cooled onions and garlic; mix until combined.
  3. Transfer mixture to a loaf pan and shape it into a loaf. Bake for 50-60 minutes until internal temperature reaches 160°F (71°C).
  4. For the glaze, whisk together ketchup, Dijon mustard, brown sugar, soy sauce, and Worcestershire sauce. After baking for 40 minutes, spread glaze over meatloaf and bake an additional 10-15 minutes.
  5. Let rest for 10 minutes before slicing.
