  • 3 egg whites
  • ¼ cup honey or powdered monk fruit
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips (70% or higher)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk the egg whites, honey or monk fruit, vanilla extract, and salt until frothy.
  3. Stir in the shredded coconut until well combined.
  4. Scoop tablespoon-sized mounds onto the prepared baking sheet with space between each.
  5. Bake for 18–20 minutes until edges are golden brown; let cool on the baking sheet.
  6. Melt dark chocolate chips in a saucepan over low heat and dip cooled macaroons into the chocolate. Place back on parchment to set.
