  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F. Line a muffin pan with paper baking cups.
  2. In one bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, combine pumpkin puree, sugars, eggs, vegetable oil, and vanilla; mix until smooth. Gradually add dry ingredients until just combined.
  4. Fill muffin tins about 3/4 full with batter.
  5. In a separate bowl, beat cream cheese with sugar and egg yolk until smooth; add vanilla.
  6. Top each muffin with the cream cheese mixture and gently swirl using a toothpick.
